About Black Bean Chalupas

These crispy homemade chalupas are loaded with refried black beans and layered with cheese and a zesty, creamy sauce that adds the ideal tangy kick to balance the richness. Ingredients for Creamy Sauce

1/2 cup mayonnaise

2 tablespoons sour cream

1 tablespoon lime juice

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (optional, for heat)

8 chalupa shells (cooked per package instructions)

2 tablespoons olive oil

2 cups refried black beans (season to your liking)

2 1/2 cups shredded Mexican blend cheese

1 cup diced tomatoes

2 cups shredded lettuce

1 cup diced red onion

2 tablespoons chopped cilantro or green onion for garnish

Preparation

01To make the sauce, in a small bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, paprika, cumin, garlic powder, cayenne (if using), and salt.
02Taste and adjust seasonings as needed. Add more lime for tang or more chili powder for spice. Chill in the fridge while preparing the chalupas.
03Crisp the chalupa shells by heating a large skillet over medium heat and add a drizzle of olive oil. Lightly fry each chalupa for about 1-2 minutes on each side (follow your package instructions).
04Spoon a generous amount of the refried black beans into each chalupa shell. Drizzle or spread a spoonful of the creamy sauce over the beans. Top with Mexican blend cheese.
05Top each chalupa with diced tomatoes, lettuce, red onion, and a little more sauce if desired. Sprinkle with cilantro or green onion and serve warm.
