Ingredients

2 medium pears (Bartlett or D’Anjou pears), cut in half lengthwise and cored

1/2 cup apple juice

1 cup water

1 tablespoon honey

1/2 cup granola

18 ounces vanilla yogurt

Mint leaves (optional)

Preparation

01Heat oven to 375 degrees F.
02In a shallow baking dish just large enough to hold the pears, place pears cut-side down.
03Pour apple juice and water over the pears. Drizzle with honey.
04Using foil, loosely cover the dish and bake approximately 35 minutes or until pears are tender.
05While pears are baking, prepare granola.
06In a shallow baking pan or pie plate, toast granola in the oven for 10 minutes; set aside to cool.
07Into a colander (lined with paper towels)placed over a bowl to catch drips, pour in the yogurt and drain approximately 30 minutes.
08Into 4 shallow bowls, divide the yogurt. Over the yogurt, place a warm pear, cut-side up. Top with toasted granola and drizzle with syrup. Garnish with mint leaf (optional)
