Air Fryer Cheesy Alfredo Arancini

3 eggs, divided

2 1/2 cups cooked rice, cooled

1 cup grated Parmesan

1/2 stick butter, melted

1/4 cup heavy cream

1/2 teaspoon salt

1/4 teaspoon freshly ground pepper

4 ounces fresh mozzarella, cubed

1 cup Italian-style seasoned breadcrumbs

Nonstick cooking spray

1/4 cup parsley, chopped

1 cup marinara sauce, warmed


01Preheat air fryer to 400°F. Beat one egg in a large bowl. Add rice, grated Parmesan, butter, heavy cream, salt and pepper to bowl and mix to combine.
02Roll rice mixture into 1”-balls, stuffing a cube of mozzarella inside each one.
03In a small bowl, beat remaining 2 eggs and place breadcrumbs in a shallow dish. Dip each rice ball into beaten eggs, then roll in breadcrumbs until completely coated.
04Spray air fryer basket with nonstick cooking spray. Add arancini to basket and spray the tops as well. Cook until golden and crispy, about 10 minutes.
05Transfer arancini to a serving plate, garnish with parsley and serve with warm marinara sauce.
