Ingredients

1 large onion, diced

2 pounds yellow squash, sliced lengthwise 1/4 inch thick

1 teaspoon kosher salt

1/4 teaspoon ground black pepper

1 teaspoon dried thyme

4 eggs, beaten

1 cup 2% or whole milk

8 ounces grated white cheddar cheese

Preparation

01Preheat oven to 350 degrees F.
02Layer squash in 9x13 baking dish, add some onions, add another layer of squash, then more onions; continue until all squash and onions are layered in the baking dish.
03In a bowl, whisk together salt, pepper, thyme, eggs, and milk. Mix in cheese and pour over squash and onions in baking dish.
04Bake for one hour till golden brown. Let cool 15 minutes before cutting into squares to serve.
