Zucchini Macaroni and Cheese

3 cups macaroni pasta

2 cups shredded zucchini

1/4 cup finely chopped onion

1 tablespoon olive oil

1 clove garlic

1/3 cup milk

1 egg

2 1/2 cups shredded Cheddar cheese

1/2 teaspoon salt

1/2 teaspoon pepper


01Boil pasta according to directions on the box.
02Meanwhile, heat olive oil in sauce pan over medium heat. Add zucchini, onion and garlic. Sauté for about 8 minutes until zucchini is cooked, stirring frequently. Add milk, salt and pepper. Simmer on low to medium heat for another 3 to 4 minutes until hot and bubbly. Remove from heat and let cool for a few minutes.
03Combine zucchini mixture with drained pasta, egg and 2 cups cheese and stir. Pour into a greased 2 quart baking pan. Sprinkle remaining half-cup of cheese on top. Bake at 375 degrees for 30 minutes.
