1 pound pasta of your choice, cooked 2 minutes less than package directions
1/4 teaspoon ground black pepper
1 teaspoon kosher salt
01Preheat oven to 350 degrees F.
02In a large sauté pan or skillet over medium heat, add oil. Add broccoli rabe and mushrooms and sauté, approximately 10 minutes until cooked through and moisture released. Set aside.
03In a large saucepan over medium heat, melt butter. Add flour and mix well, making a roux. Turn down heat to low and cook for approximately 5 minutes. Add milk to roux and mix well until incorporated. Simmer on low and add 3/4 of the cheese in batches, mixing until melted.
04Mix pasta, cheese sauce, broccoli rabe, and mushrooms together. Pour into a 9x13 baking dish and top with remaining cheese. Bake for 30 minutes until bubbly and golden brown. Let rest 5 minutes before serving.
