02Butter one side of each waffle and place waffles on a work surface, butter-side-down. Top 4 waffles with about ¼ cup shredded cheese. Add desired fillings and top with another ¼ cup cheese.
03Top each sandwich with a waffle and, in batches, cook sandwiches on the griddle until each side is golden brown and crisp and cheese is melted, 3 to 5 minutes. Serve hot.

Sharp cheddar cheese, thinly sliced apples and caramel sauce.
BBQ pulled pork, Colby Jack cheese and crispy fried onions.
Sliced ham, Swiss cheese or Mozzarella, sliced pickles and mustard.
