Ingredients

3 (16 ounce) packages mini Bella mushrooms, cleaned

1 tablespoon Grapeseed oil

1 medium onion, chopped

3 tablespoons garlic, minced

4 cups spinach

8 ounces cream cheese

1 cup walnuts

3 tablespoons nutritional yeast (optional)

Preparation

01Preheat oven to 400 degrees Fahrenheit.
02Separate head of mushroom from stems and put aside. Cut of the hard end of mushrooms.
03In a large sauté pan, add oil over medium-high heat. Add onions, garlic, and mushroom stems. When onions become translucent add in spinach. Sauté just until spinach begins to wilt.
04Transfer spinach mixture into a food processor. Add in cream cheese, walnuts, and nutritional yeast. Pulse until walnuts are chopped and contents are well mixed.
05Fill mushroom caps and place them onto baking sheets. Bake for 10-12 minutes.
