About Spaghetti Grilled Cheese

Turn leftover spaghetti into an ultimate comfort food with this Spaghetti Grilled Cheese. Twirl leftover pasta between layers of gooey mozzarella and parmesan, then grill it until golden, crisp, and melty. It’s an easy, indulgent upgrade that transforms leftovers into a whole new cheesy masterpiece. Perfect for when you want something fun, fast, and seriously satisfying.

Ingredients

8 slices of bread (Italian or sourdough)

3 cups leftover cooked spaghetti with sauce (preferably marinara or tomato-based)

1 cup shredded mozzarella cheese

4 slices mozzarella cheese

1 cup shredded Parmesan cheese

2 tablespoons fresh oregano

4 tablespoons garlic butter, softened

Optional garnish: chopped parsley, extra Parmesan for topping

Preparation

01To prep the filling, in a medium bowl, combine the leftover spaghetti with 1 cup of shredded mozzarella and 1/2 cup of Parmesan. Toss until the noodles are evenly coated with cheese. This helps them stick together and melt nicely inside the sandwich.
02To assemble the sandwiches, lay out the 8 slices of bread. Butter one side of each of the slices.
03On the unbuttered side of the 4 slices, spread a generous portion of the spaghetti mixture (about 3/4 cup per sandwich).
04Sprinkle each with an extra layer of parmesan cheese, oregano, and add a slice of mozzarella.
05Put the remaining buttered bread slices atop the assembled halves, with the buttered side facing out.
06Heat a large skillet or griddle over medium heat and cook each sandwich for 3-4 minutes per side, pressing gently with a spatula until golden brown and crispy, and the cheese inside is melted.
07Slice each sandwich in half and serve warm. Sprinkle with a little Parmesan and fresh parsley if desired.
