Ingredients

4 bundles of collard greens, remove the tough stems and ribs

1/4 cup of butter

3 cloves garlic, minced

3 large shallots, minced

1 cup Greek yogurt

1/4 teaspoon of nutmeg

Kosher salt and freshly cracked black pepper

1/2 cup grated Parmesan

1/2 cup Italian cheese blend

Preparation

01Wash and clean Collards thoroughly. Chop the greens finely and set aside.
02Melt the butter in a large skillet.
03Add the garlic and shallots and cook over medium heat until softened, add chopped collard greens and toss for 4-5 minutes.
04Add the Greek yogurt and bring to a simmer, stirring occasionally. Cook until reduced by half for about 25 minutes. Watch carefully as the cream can quickly boil over.
05Season generously with nutmeg, salt and pepper. Add to a serving dish and sprinkle blend in Parmesan cheese.
06Cover top of collard greens with Italian cheese blend.
07Place in oven and bake at 350 F for 30 minutes.
