01In a stand mixer bowl, add 1 ¼ cups warm water (100 to 105 degrees F). Sprinkle yeast and sugar on top of water and allow to sit approximately 10 minutes until yeast gets creamy.
02In a different bowl, mix flour and salt. Add flour mixture to yeast mixture. Using a dough hook, mix until a coarse ball has formed (approximately 2 to 3 minutes). Allow dough to rest in bowl, covered by a damp towel, for 5 minutes.
03Mix dough again with dough hook on low to medium speed for 2 more minutes. If the dough is sticky, add flour 1 tablespoon at a time. If the dough is too dry, add water 1 tablespoon at a time.
04Coat a bowl with olive oil and place dough into bowl. Coat dough with olive oil and place a damp kitchen towel over the bowl. Allow to rise for 40 minutes until double in size.
05Divide dough into 2 dough balls and place on floured surface. Cover with damp kitchen towel and allow to rise 2 hours until double in size.
06Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
07Take one ball of dough and roll out with a rolling pin to 8 by 12 inches. Note that dough needs to be thin enough to cook through properly.
08Spread 1/4 cup pizza sauce over top of dough leaving a one-inch boarder around the edges. Sprinkle cheese evenly across the dough.
09Starting at the long side of the dough, roll up the dough tightly. Seal the ends by brushing water and pinching the dough together. Brush entire length of pizza roll-up with egg. Repeat with second ball of dough.
10Bake 30-45 minutes until outside of dough is golden brown.
11Remove from oven and allow to cool 10 to 15 minutes before slicing. Serve with remaining pizza sauce for dipping.
