Ingredients for the Salad Skewers

Wooden skewers

4 cups fresh vegetables, cut into 1-inch chunks (bell peppers, cucumbers, zucchini, tomato, radish and mushrooms)

8 ounces cheddar cheese, cut into 1-inch cubes

Ingredients for Honey Mustard Yogurt Dressing:

1 cup plain Greek yogurt

3 tablespoons Dijon mustard

2 teaspoons honey

1 teaspoon salt

1 teaspoon sugar

Ingredients for Cilantro Lime Yogurt Dressing:

1 cup plain Greek yogurt

1 tablespoon fresh cilantro, finely chopped

2 tablespoons scallion, finely sliced

2 tablespoon fresh lime juice

Salt, to taste

Preparation

01On the wooden skewers, alternate vegetables and cheese. Serve with yogurt dressing
02Honey Mustard Yogurt Dressing: In a small bowl, combine yogurt, mustard, honey, salt, and sugar and stir until well blended. Store in the refrigerator until ready to serve.
03Cilantro Lime Yogurt Dressing: In a small bowl, combine yogurt, cilantro, scallions, and lime juice and stir until well blended. Season with salt, to taste. Store in the refrigerator until ready to serve. Note: Yogurt dressings will keep 3 to 4 days in refrigerator.
