About Riz bi Haleeb (Rice Pudding)

Indulge in the creamy delight of Riz Bi Haleeb, a beloved Middle Eastern dessert that combines the comforting richness of rice pudding with the aromatic essence of orange blossom and rose petals. Made with simple ingredients like rice, milk, and sugar, this dessert is slow-cooked to achieve a smooth, luscious texture that melts in your mouth. Often garnished with a sprinkle of  crushed pistachios, Riz Bi Haleeb is a treat that’s perfect for any occasion.

Ingredients

1/2 cup orange blossom water

1/2 cup cornstarch

3 cups milk

1 cup heavy cream

1 cup cooked jasmine rice

1 pinch salt

1 tablespoon vanilla

5 cardamom pods, finely ground

3/4 cup sugar

1/4 cup crushed pistachios

1 tablespoon dry edible rose petals

Preparation

01In a small bowl, mix orange blossom water and cornstarch. Set aside.
02In a large saucepan over medium heat, mix milk, heavy cream, rice, salt, vanilla, cardamom, and sugar.
03Continue stirring until the mixture begins to simmer. Reduce to low heat to prevent mixture bubbling over.
04Using a whisk, stir in cornstarch mixture. Stir constantly on medium-low heat until pudding begins to bubble.
05Remove pudding from heat and pour into serving dishes.
06Garnish with pistachios and rose petals to serve warm or chilled.
