Ricotta Pie

1 lb. ricotta cheese

1/2 pint whipping cream

4 eggs

1 tsp vanilla

4 tbsp sugar

pinch of salt

1 tsp cornstarch

zest and juice of 1 lemon


01Preheat oven to 350 degrees. In a large mixing bowl, beat all ingredients until well blended. Pour the mixture into an unbaked 10-inch pie crust, or use a refrigerated pie crust. Bake for one hour, until a toothpick comes out clean. When cool, sprinkle with powdered sugar.
