Puré de Papa Horneado

Ingredientes

4 libras de papas (Russet, Yukon Gold o una mezcla de ambas), peladas y cortadas en cuartos

1 taza de mantequilla sin sal a temperatura ambiente cortada en trozos

1 1/2 tazas de leche entera caliente (o mitad y mitad)

Sal kosher y pimienta negra recién molida al gusto

3 tazas de queso cheddar amarillo rallado- cantidad dividida

1/2 libra de tocino cocido y desmenuzado- cantidad dividida

1/2 taza de crema agria

2 cebolletas en rodajas finas

Preparación

01Precalienta el horno a 350F.
02Agrega las papas a una olla grande con suficiente agua fría para cubrir las papas por 1”. Salar generosamente el agua y llevar a ebullición a fuego alto. Una vez que hierva, reduce el fuego a medio y continúa hirviendo suavemente hasta que las papas estén tiernas de 10 a 15 minutos dependiendo del tamaño.
03Retira del fuego y escurre devolviendo las papas a la olla caliente para que se evapore el exceso de humedad.
04Agrega mantequilla y leche caliente a las papas y bate con una batidora de mano hasta que quede suave y esponjoso. Sazona con sal y pimienta al gusto y mezcla hasta que se combinen.
05Revuelve la crema agria, 2 tazas de queso cheddar y la mitad del tocino desmenuzado en el puré de papas cremoso y transfiérelo a una fuente grande para hornear. Cubre con el queso restante y el tocino. Hornea sin tapar hasta que el queso encima se derrita y comience a dorarse de 25-30 minutos. Retira del horno y cubre con cebolletas.
