Ingredients for Pie Filling

¼ cup orange juice

1 ½ tsp. lemon juice

¼ cup water

½ cup sugar

1 20 oz. can crushed pineapple, undrained

1 ½ heaping tbsp. flour

2 eggs, beaten

1 tbsp. butter

Pinch of salt

Ingredients for Topping

1 cup heavy whipping cream

1 tbsp. sugar

1 tsp. vanilla

9” baked flour pie crust

Preparation

01Combine orange juice, lemon juice, water, sugar, pineapple, flour and eggs in saucepan.
02Bring to boil over medium heat, stirring constantly until thickened. Remove from heat; add butter and salt. Cool slightly, stirring occasionally to prevent skin from forming; pour into pie shell. Refrigerate.
03For topping: Beat heavy whipping cream until soft and fluffy. Add sugar and vanilla; beat. Spread over cooled pie.
