Ingredients

1 onion, cut into 1-inch pieces

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 tablespoon olive oil

1/4 teaspoon salt

1/4 teaspoon pepper

4 links Italian chicken sausage, fully cooked, cut into 1-inch slices

2 pounds provolone cheese, blocks

Oil, for the grill

Preparation

01Preheat the grill to medium-high. Coat the grill grate with oil to help prevent sticking.
02Cut the cheese into 32, 1/2 inch cubed blocks.
03In a large bowl, combine the onion and bell pepper pieces. Sprinkle with olive oil, salt, and pepper. Toss to coat.
04Alternately thread sausage and vegetables on the skewers. Grill, covered, for 8–10 minutes or until sausage is heated through and vegetables are tender, turning occasionally. Remove skewers from the grill. Thread two cheese cubes onto both ends of each of the skewers.
