About Parmesan Tilapia

Ingredients

1 pound tilapia, cut into 4 pieces

1/4 teaspoon salt

1/4 teaspoon black pepper

3/4 cup plain Greek style yogurt

1 teaspoon hot sauce

1/4 cup breadcrumbs or panko

1/2 cup grated Parmesan cheese

2 tablespoons cornmeal

Preparation

01Preheat the oven to 400 F. Place a wire rack over a large, rimmed baking sheet and coat both with cooking spray.
02Pat the tilapia dry with paper towels. Sprinkle both sides of each piece of fish with salt and pepper. Set aside.
03In one large bowl, whisk together yogurt, 2 tablespoons water and hot sauce. In another large bowl, whisk together breadcrumbs, Parmesan cheese, and cornmeal.
04Dip one of the pieces of fish in the yogurt coating and coat it on both sides. Slide any excess yogurt back into bowl and then dip into the Parmesan cheese coating, turning a few times to make sure both sides are completely covered. Place the coated fish on the wire rack and repeat with the remaining pieces.
05Bake in the oven for 12 to 15 minutes or until the thickest pieces of fish just starts to flake in the middle. Remove from the oven and serve.
