Microwave Bacon Jalapeño Mac and Cheese

Ingredients

1 cup macaroni noodles

1 cup water

1/2 teaspoon kosher salt

1/2 cup low-fat milk

1 cup shredded reduced-fat cheddar cheese

1/2 cup reduced-fat shredded Colby cheese

1/2 cup pickled jalapenos, drained, plus more for garnish

4 strips bacon, cooked and chopped, divided

1 green onion, thinly sliced

Preparation

01Combine macaroni, water and salt in large microwave-safe bowl. Microwave on high for 12 minutes, stirring every 2 minutes, until pasta is fully cooked and water is absorbed.
02Stir in milk, cheddar, colby, jalapenos and half the bacon until combined. Microwave on high until cheese is melted, about 1 to 2 minutes. Top with pickled jalapenos, remaining bacon and green onions. Serve and enjoy.
