Korean Corn Cheese

Ingredients

2 tablespoons butter

1/2 cup finely chopped onion

4 (15 ounce) cans corn, drained and rinsed

1/4 cup mayonnaise

1/3 cup plain Greek yogurt

2 teaspoons granulated sugar

1/4 teaspoon salt

1/8 teaspoon black pepper

2 cups mozzarella cheese, shredded and divided

Parsley or chives, chopped (optional garnish)

Preparation

01Preheat broiler.
02Heat a large cast-iron skillet over medium-high heat. Melt the butter and sauté onions until translucent and tender, about 5 minutes.
03Add the corn, mayonnaise, yogurt, sugar, salt, and pepper. Mix well to combine. When the mixture is bubbling and hot, turn off the heat. Stir in 1 cup of the mozzarella cheese until melted.
04Sprinkle the surface with the remaining 1 cup cheese and place under the broiler on low for 2 to 5 minutes, until the cheese has melted and lightly browned.
05Remove from the oven and garnish with parsley or chives, if using. Serve warm.
