Ingredients

2 cups fresh or frozen cranberries

1/4 cup water

4 tablespoons maple syrup, divided

1 cup milk

1 cup plain Greek yogurt

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

Zest of 1 orange

1/2 cup chia seeds

Toppings: whipped cream, shelled pistachios, dried cranberries

Preparation

01In a medium pot over medium heat, add cranberries, water and 2 tablespoons of maple syrup. Cover and cook, stirring occasionally until cranberries burst, about 5 minutes.
02Once cool, add cranberries to a blender or food processor and blend until smooth, add extra water if needed.
03In a medium bowl, whisk together milk, yogurt, vanilla, cinnamon, ginger, cloves & orange zest.
04Pour in cranberry puree and whisk until combined.
05Add in chia seeds and stir to combine. Let sit for 5 minutes, stirring occasionally.
06Portion chia pudding into 4 1-cup glass containers, cover and place in the refrigerator for at least one hour or overnight.
07When ready to enjoy serve with whipped cream, pistachios & dried cranberries.
