Green Smoothie Bowl

Ingredients

1 cup buttermilk or plain kefir

1 cup baby spinach, packed

1 celery stalk, roughly chopped

1 scallion, green and white parts roughly chopped

1 cucumber, seeded and chopped

1/2 avocado

1/4 cup cilantro, leaves and stems

1/2 lime, juiced

1 teaspoon turmeric

1/2 teaspoon black pepper

1/4 teaspoon kosher salt

Crème fraiche or plain Greek yogurt, optional for topping

Toppings: queso blanco crumbles, cherry tomato halves, cucumber slices, fresh herbs, pepita seeds, hemp seeds, red pepper flakes

Preparation

01Combine the buttermilk, spinach, celery, scallion, cucumber, avocado, cilantro, lime juice, turmeric, black pepper, and kosher salt in a blender or food processor. Blend until well combined.
02Pour the mixture into a bowl and top with a dollop of crème fraiche or plain Greek yogurt. Add toppings of choice and enjoy immediately.
