About Fruit and Cheese Puff Pastry Cups

Ingredients for Pastry Cups

4 sheets frozen puff pastry (thawed)

1 cup Sorrel Jam

1 (8 ounce) package cream cheese

1 (8 ounce) container mascarpone cheese

1 egg with 1 tablespoon water

Ingredients for Garnish

Fresh berries of choice

2 tablespoons powdered sugar

Preparation

01Remove puff pastry from the freezer, allow to thaw at room temperature.
02Preheat the oven to 425 F.
03Use a hand mixer to whip mascarpone and block cheese in a medium bowl. Set aside.
04Whisk egg and water in a small bowl and set aside.
05On a lightly floured surface, place one sheet of puff pastry dough. Use a sharp knife or pizza cutter to cut the pastry into 13 equal pieces. Use a muffin/cupcake to imprint onto the dough. This will help to guide the cutting process.
06Place each cut square into the same muffin tin used for imprinting. Egg wash each cup.
07Place about 1 teaspoon sorrel jam into each cup.
08Top each cup with about 1 tablespoon cheese mixture.
09Bake for 15 minutes on the middle rack of the oven until golden brown.
10Remove each cup from the muffin tin and top with fresh berries and garnish with powdered sugar.
