Ingredients for Farmers Market Salad

1 medium head of lettuce or 1/2 medium head of red cabbage

2 medium cucumbers, sliced

3 medium carrots, shredded

4 medium radishes, thinly sliced

1 pint cherry tomatoes, halved

1/2 medium red onion, very thinly sliced

1 large apple, thinly sliced

1/2 cup dried cranberries

1 1/4 cup Parmesan cheese, freshly grated from block

Ingredients for Creamy Lemon Herb Dressing

4 tablespoons lemon juice

Zest of one lemon

2 green onions

1/2 shallot, finely minced

1 1/2 cup soft herbs (parsley, basil, cilantro)

3/4 cup sour cream

3 tablespoons extra-virgin olive oil

1 teaspoon honey

Salt & pepper

Preparation

01To make the dressing, blend all the dressing ingredients together in a food processor, blender or with a handheld blender.
02In a large bowl, add in all the salad ingredients.
03Add in the dressing, toss well and serve.
