I made this last night for an early family Thanksgiving dinner. It turned out amazing! It was simple to prepare, and the coconut cream filling is thick and luscious. It is not overly sweet so when you stir in the toasted coconut it really shines. The only "modification" I made was to pulse the coconut in the food processor before toasting it to give it a better mouthfeel. This is going to be on my regular recipe rotation.
