Wet Ingredients

2 cups whole milk

2 eggs

4 tablespoons canola oil

1/4 teaspoon peppermint extract

Dry Ingredients

2 cups all-purpose flour

1/4 cup unsweetened cocoa powder

3 tablespoons granulated sugar

1 teaspoon baking soda

Pinch of salt

1/2 cup chocolate chips

2 candy canes, crushed

Ingredients for Topping

Chocolate syrup, maple syrup, or butter

Preparation

01In a large bowl, mix all the wet ingredients together (milk, eggs, oil, and peppermint extract). Set aside.
02In a separate bowl, mix the flour, cocoa powder, sugar, baking soda, and salt.
03Add the dry ingredients into the bowl with the wet ingredients. Mix well.
04Add in the chocolate chips and crushed candy canes. Set aside some chocolate chips and crushed candy canes for garnishing and mix well.
05Use a skillet or flat pan to make your pancakes. Flip when each side has a golden-brown coating.
06Top with butter, maple syrup, or chocolate syrup, and garnish with chocolate chips and candy canes.
