About Cheesecake Stuffed Cookie Bars

A delectable dessert consisting of the flavors of rich, creamy cheesecake sandwiched between layers of soft and chewy homemade chocolate chip cookie dough, creating a delightful fusion of cheesecake and cookies in a convenient bar form. These Cheesecake Stuffed Cookie Bars are easy-to-make and an absolute crowd pleaser.

Ingredients for Cookie Dough

4 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking soda

1 1/2 cups butter (room temperature)

1 cup granulated sugar

1 1/2 cups brown sugar

2 eggs (room temperature)

3 teaspoons vanilla

3 cups chocolate chips

16 ounces cream cheese (room temperature)

1 cup sugar

2 eggs (room temperature)

3 teaspoons vanilla

Preparation

01Preheat oven to 350 degrees Fahrenheit and prep 9x13inch pan with parchment paper. Spray with cooking spray.
02Whisk together the flour, salt, and baking soda in a large bowl. Set aside.
03Using a handheld or stand mixer, beat together the butter, sugar, and brown sugar until light and fluffy (~ 3minutes).
04Add in the eggs and vanilla. Beat until combined.
05Add the dry ingredients and mix until a few flour streaks remain.
06Add the chocolate chips and fold in with a rubber spatula.
07To make the cheesecake filling, use a handheld or stand mixer and beat the cream cheese, sugar, eggs, and vanilla until they are combined and smooth.
08Take 2/3 of the cookie dough and press flat to the bottom of the pan. Then, top the cookie dough layer with cheesecake filling. Break the remaining 1/3 of cookie dough into small pieces and top the cheesecake layer.
09Bake in oven for 40-45 minutes until cheesecake layer is set and the cookie layer is a light gold color. Let the bars cool and then transfer to the refrigerator to chill. Slice after chilling for at least an hour.
