Ingredients

1 tablespoon butter, softened

2 slices sourdough bread

1/2 tablespoon pesto

3 slices mozzarella cheese

2 slices tomato

3 basil leaves, thinly sliced

1/2 tablespoon balsamic glaze

1 tablespoon olive oil

Preparation

01Spread butter on one side of each slice of bread.
02On the nonbutter side of one slice of bread, spread pesto.
03Layer cheese on top of pesto, then add the tomato slices. Sprinkle on basil and drizzle with balsamic glaze. Top with the other slice of bread, making sure the buttered side faces outward.
04In a large skillet, heat oil over medium heat.
05Place the sandwich in the skillet, cover, and cook for 2 minutes, or until bread is golden brown.
06Remove the lid, flip the sandwich, then replace the lid and cook for 2 minutes more, until bread is golden brown on the second side.
07Serve warm.
