BBQ Pork Kebabs and Spicy Buttermilk Sauce

Ingredients for BBQ Pork Kebabs

2/3 cup ketchup

3 tablespoons maple syrup

1/4 cup apple cider vinegar

1 teaspoon kosher salt

1/2 teaspoon ground black pepper

1/2 teaspoon cayenne

2 teaspoons smoked paprika

2 1/2 pounds boneless pork roast (loin)

Ingredients for Spicy Buttermilk Sauce

1 cup buttermilk

1/2 cup sour cream

Juice of 1 lemon

1 teaspoon kosher salt

1/2 teaspoon ground black pepper

1 to 2 teaspoons hot sauce


01In a bowl, whisk together ketchup, maple syrup, vinegar, 1 teaspoon salt, 1/2 teaspoon pepper, cayenne, and paprika. Cut pork into 1-inch chunks and place in bowl with marinade, mixing well. Allow pork to marinate at least 30 minutes up to 4 hours.
02In a bowl, whisk together buttermilk, sour cream, lemon juice, 1/2 teaspoon salt, 1/4 teaspoon pepper, and hot sauce. Set aside in refrigerator until ready to eat.
03Heat a grill over medium heat and lightly oil the grates. Thread pork onto 8 to 10 skewers, leaving some space between pieces.
04Place pork skewers on the grill and cook, turning occasionally, for 5 to 6 minutes. Pork should be slightly pink inside. Transfer to a platter and serve with sauce.
05CHEF TIP: Using bamboo wood skewers? Be sure to soak them in water for 30 minutes prior to cooking. This will protect the skewers so they don’t catch fire when they’re on the grill!
