1 cookie (chocolate chip, peanut butter, or oatmeal raisin), crumbled
1 tablespoon almond butter
1 tablespoon honey
1 teaspoon baking powder
Pinch of salt
1 tablespoon semisweet chocolate chips
01In a blender, add milk, oats, banana, cookie, almond butter, honey, baking powder, salt, and half of the chocolate chips. Blend all ingredients until well combined and completely smooth, approximately 30 seconds.
02Grease a microwave-safe bowl (like an 8-ounce ramekin) with nonstick cooking spray and pour oat mixture into the bowl. Sprinkle the remaining chocolate chips evenly on top of the batter. Microwave batter on high for 2 to 3 minutes, until the center is set and chips are melted.
03Cooking time may vary depending on the microwave, but 3 minutes typically works best.
04Serve baked oatmeal immediately, topped with a couple extra splashes of milk and cookie crumbles!
