About Whipped Ricotta on Cuban Toast

Ingredients for Whipped Ricotta

16 ounces ricotta cheese

1 tablespoon honey

1 teaspoon Vanilla extract

1/2 teaspoon sea salt

1/4 teaspoon lemon zest

Extra Virgin olive oil

Ingredients for Toast

1 loaf pan Cubano (Cuban bread) or a soft baguette, sliced into 8-9 equal pieces

1 mango, cut into small cubes

2 jalapeños, finely chopped, seeds taking out

1/2 cup cilantro, chopped

1/2 cup Queso fresco

3 avocados

Preparation

01In a large bowl, add in the ricotta, honey, vanilla, salt, and lemon zest and mix well and set aside.
02Toast the slices of bread and place on a platter.
03Top 3 toasts with each of the below topping combinations or all 9 slices with one combination.
04Topping 1: for the avocado combination, add the whipped ricotta, avocado, cilantro, olive oil drizzle, and a sprinkle of salt.
05Topping 2: for the mango combination, add the whipped ricotta, diced mango, and jalapeños.
06Topping 3: for the strawberry queso combination, add the whipped ricotta, sliced strawberries, and queso fresco.
