Ingredients for Whipped Ricotta

16 ounces ricotta cheese

1 teaspoon garlic powder

1/2 teaspoon sea salt

1/4 teaspoon black pepper

Ingredients for Bruschetta

1 baguette

Olive oil

Red: Strawberries + Basil

Orange: Peaches + Prosciutto

Yellow: Yellow Tomatoes (mixed in salt and pepper) + Basil

Green: Sliced avocados and pesto

Blue: Blueberries and honey

Purple: Grape Jam + Nuts

Preparation

01Preheat the oven to 350 F.
02Mix the ricotta cheese, garlic powder, sea salt, and black pepper in a large bowl with a hand mixer or in a stand mixer for 2-3 minutes until the texture is whipped. Set aside.
03Slice the baguette into 12 slices and place on a baking sheet. Drizzle with olive oil and bake for 5-6 minutes.
04Remove from oven and let the slices cool for 2 minutes.
05Top each slice with a generous amount of whipped ricotta.
06Top two bruschetta slices with the same toppings, from red to purple as listed in the ingredients.
