These Toasted Coconut Rock Buns with Vanilla Cream Drizzle are rustic, bakery-style treats with crisp edges and tender, cake-like centers. Ingredients for Rock Buns

3 cups all-purpose flour

3 tsp baking powder

3/4 teaspoon salt

3/4 teaspoon ground nutmeg

3/4 cup (1 1/2 sticks) cold butter, cubed

1 cup brown sugar

1 cup unsweetened coconut flakes, lightly toasted

1/3 cup raisins

1/3 cup dried cherries

2 large eggs

1 1/2 cups whole milk

1 1/2 teaspoons vanilla extract

2 tablespoons butter, melted

1/2 cup heavy cream

1 cup powdered sugar, sifted

1/2 teaspoon vanilla extract

Preparation

01Preheat the oven to 375 F.
02In a dry skillet over medium-low heat, toast coconut flakes for 3–5 minutes, stirring frequently, until golden and fragrant. Set aside to cool.
03In a large bowl, combine the flour, baking powder, salt, and nutmeg.
04Cut in butter by adding the cubed cold butter and rubbing it into the flour mixture using your fingertips until it resembles coarse crumbs.
05Add the sugar and fruits and stir in the brown sugar, toasted coconut, raisins, and dried cherries.
06Whisk the egg, milk, and vanilla in a small bowl. Pour into the dry mixture and gently stir until the dough just comes together.
07Scoop rough mounds, about 2 tablespoons each, onto a parchment-lined baking sheet, spacing them a few inches apart. The buns should keep a rugged, craggy look. Bake at 375 F for 18–20 minutes, or until golden brown on top and firm to the touch.
08Whisk melted butter, heavy cream, powdered sugar, and vanilla until foamy and pourable. Do not whip into peaks/whipped cream. Add a touch more cream if needed for consistency.
09Once buns are slightly cooled, drizzle with the vanilla cream and sprinkle with a few extra toasted coconut flakes for garnish.
