Ingredients

2 cups pancake mix

2 cups milk

4 large eggs

2 teaspoons vanilla extract

Food coloring (red, orange, yellow, green, blue, purple)

Whipped cream

Rainbow sprinkles

Preparation

01Heat griddle or skillet over medium-high heat or electric griddle to 375 F; grease with non-stick cooking spray.
02In a large bowl, stir together pancake mix, milk, eggs and vanilla extract until blended.
03Evenly separate the batter into 6 smaller bowls and add food coloring to get your desired colors.
04Pour about 1/4 cup of mix onto the hot griddle and cook until edges are slightly done. Flip; cook an additional 1-2 minutes.
05Stack on serving plates, top with whipped cream and sprinkles and serve warm.
