Ingredients for Cranberry Vanilla Syrup

1 cup cranberries

1 piece of an orange peel

1 cinnamon stick

2 cups water

1 1/2 cup sugar

1 vanilla bean, scraped (or 1 teaspoon vanilla extract)

Ingredients for Panna Cotta

1/2 cup prosecco

1 pack unflavored gelatin

1 cup milk

2 cups heavy cream

1/2 cup sugar

1 vanilla bean, scraped

Edible gold flakes, optional

Preparation

01To make the syrup, place the cranberries in a medium size saucepan, over medium/low heat and cover with water (2 cups). Stir in the sugar and vanilla. Add in the orange peel and cinnamon stick. Bring to a simmer.
02Let the mixture simmer for about 15 minutes, until the cranberries have burst and the mixture has thickened.
03Place a fine mesh sieve over a bowl. Strain the cranberries through the sieve, press down on the cranberries with the back a of spoon. Let syrup cool before using. Place in a glass jar with a lid, refrigerate until ready to use.
04To make the Panna Cotta, in a small bowl, add the gelatin to the prosecco. Stir well and set aside.
05In a saucepan over medium heat, add milk, cream, sugar, and vanilla. Stir gently and heat through, until the sugar is dissolved.
06Add prosecco mixture, stir once more until dissolved into the milk and remove from heat.
07Divide among 6 small glass bowls, glasses, or jars. Refrigerate for at least 8 hours or until set.
08When serving, add one tablespoon of the cranberry vanilla syrup to the top of each glass, garnish with edible gold if desired.
