1 cup oat flour
1 cup all-purpose flour
1/4 cup white sugar
2 tablespoons baking powder
1/2 teaspoon salt
2 cups milk
1/4 cup unsalted butter, melted
2 large eggs
1 tablespoon cake batter extract (can swap in pure vanilla extract)
1/2 cup rainbow sprinkles
01Preheat the oven to 350 F. Spray two mini muffin pans (with 24 mini muffins each) with nonstick cooking spray. Set aside.
02In a large bowl, whisk together the oat flour, all-purpose flour, sugar, baking powder, and salt.
03To the bowl, add the milk, melted butter, eggs, and cake batter extract. Mix until all ingredients are combined, and no lumps remain. Fold in the sprinkles.
04Pour the batter into the prepared mini muffin tins.
05Bake for 10 minutes, until an inserted toothpick comes out clean.
06Let cool slightly before removing the pancake muffins from the tin. Serve with maple syrup, if desired.
