About Golden Harvest Squash Flatbread

A savory twist on white pizza, featuring a creamy blend of ricotta and mozzarella cheeses as the base. Topped with tender slices of roasted squash, this flatbread brings a warm, golden hue to your plate, evoking the cozy essence of fall. The mild sweetness of the squash complements the rich, velvety cheeses, while basil and lemons adds a subtle depth of flavor. Crisp yet soft, this flatbread is the perfect fusion of seasonal comfort and simplicity.

Ingredients

2 Flatbreads (or 1 big flatbread)

4 tablespoons olive oil

1 cup ricotta

2 tablespoons lemon juice (freshly squeezed), and some zest

Salt & black pepper per taste

1 cup shredded mozzarella

1/2 cup fresh mozzarella pearls

4 tablespoons fresh chopped basil

1/2 of a small zucchini, thinly sliced

1/2 of a small yellow squash, thinly sliced

2 teaspoons crushed red pepper flakes

Preparation

01Set the oven to broil. Add your thinly sliced zucchini and yellow squash to a baking sheet and coat with 2 tablespoons of olive oil. Add salt & black pepper per taste. Broil on both sides until slightly golden brown.
02When done, set your oven to bake at 375 F.
03Mix together the ricotta, lemon juice, salt and black pepper. Spread it over the flatbread(s).
04Add the mozzarella cheese, followed by layers of the zucchini.
05Add the fresh mozzarella pearls on top followed by the crushed red pepper flakes.
06Bake for 15 minutes or until the cheese is melty.
07Garnish basil and lemon zest.
