Ingredients for Crust

1 1/2 cup graham crackers, crushed

7 tablespoons melted butter

2 tablespoons white sugar

1 tablespoon brown sugar

Ingredients for Filling

24 ounces softened cream cheese

1 cup sugar

3/4 cup eggnog

1/4 cup sour cream

3 tablespoons flour

2 large eggs

1 tablespoon vanilla bean paste

1/2 teaspoon pumpkin pie spice

1/4 teaspoon nutmeg

Pinch of salt

Preparation

01Make the crust by combining the graham cracker crumbs, melted butter, and sugar.
02Preheat the oven to 350 F.
03Press the graham cracker crust into a springform pan evenly.
04Partially bake the crust in the oven for 10 minutes and then remove it from the oven and set aside.
05Reduce the oven heat to 250 F.
06At a low speed, blend the cream cheese and slowly pour in sugar.
07Then, one by one, blend in the flour, eggnog, vanilla bean paste, 2 eggs, nutmeg, and pumpkin pie spice.
08Finish by folding in the sour cream with a spatula.
09Add the eggnog mixture to the partially baked crust and bake for 10 minutes at 350 F.
10Bake for 45-50 minutes at 300 F.
11The surface should be firm and allow it to cool. Then refrigerate overnight.
12Garnish with whipped cream and serve.
