3 cups ice cream (any flavor)
1/3 cup creamy peanut butter
1 tablespoon butter
1 (10 ½ ounce) bag of mini marshmallows
6 cups crispy rice cereal
01Place ice cream in mixing bowl to soften while preparing the remainder of the recipe.
02In a large pot over low heat, melt peanut butter and butter. Add marshmallows and stir until completely melted. Remove from heat and add in cereal, mix well.
03Press half of cereal mixture into a 9-inch square baking dish coated with cooking spray. Spread ice cream evenly across cereal. Press remaining cereal mixture on top.
04Set in freezer for 30 minutes or until set. Cut into 9 “sandwiches” and serve.
