Sweetened naturally with honey and lightened with milk if needed, the batter comes together in just minutes. As they cook, you’ll love the golden edges and tender centers. Serve them up warm with butter, maple syrup, and juicy fresh berries for a breakfast that feels indulgent but is surprisingly wholesome.

Ingredients

1 cup all-purpose flour

2 teaspoons baking powder

2 cups cottage cheese

1 teaspoon cinnamon

2 tablespoons honey

4 eggs

2 teaspoons vanilla extract

2 - 3 tablespoons milk (as needed for mixture)

Butter for serving

Maple syrup for serving

Fresh berries for serving

Preparation

01In a bowl, combine the flour and baking powder.
02In a blender or large bowl using a hand mixer, add the cottage cheese, cinnamon, eggs, vanilla extract, and honey. Blend until combined well and the texture is smooth.
03Once mixed, add the cottage cheese mixture into the bowl of dry ingredients. Stir to combine well. Add a bit of milk as needed if needed to ensure the batter isn’t too thick.
04Heat a pan or griddle on low to medium heat and spray with non-stick cooking spray.
05Scoop a quarter cup of batter and pour onto the pan. Use the back of a spoon to spread the batter into a circular shape if needed.
06Cook for about 4 minutes until the edges are solid enough to flip over. Flip the pancake and cook for an additional 2 minutes.
07To serve, place pancakes on each plate, top with a pat of butter, maple syrup and fresh berries.
