Classic Chocolate Chip Cookies

3/4 cup firmly packed brown sugar

1/2 cup granulated sugar

1/2 cup butter, softened

1/2 cup canola oil

1 ½ teaspoon vanilla

1 egg

1 ¾ cup unbleached flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup quick oats

1 cup semi-sweet chocolate chips

1/2 cup walnuts, or other nut of your choice (optional)


01Preheat oven to 375°F.
02In a large bowl, beat brown sugar, sugar, butter, and oil with a whisk. Add vanilla and egg, blend well.
03With a wooden spoon, stir in flour, baking soda, salt, and quick oats. Add chocolate chips and walnuts (if using). Mix well.
04Drop large spoonfuls of dough on a greased cookie sheet. Bake 8-10 minutes.
