About Cheddar Parmesan Crackers

Made with sharp cheddar, nutty Parmesan, and a handful of simple ingredients, these crispy crackers are an easy-to-make treat that’s perfect for any occasion. Ingredients for Crackers

1 cup shredded cheddar cheese

1/2 cup grated parmesan cheese

3/4 cup flour

1/4 teaspoon dry mustard

1/4 teaspoon kosher salt

1/8 teaspoon cayenne pepper

4 tablespoons unsalted butter, diced into small cubes

2 tablespoons water

Ingredients for Apple Pear Butter

4 medium apples, peeled, cored, and cut into 1-inch chunks

2 medium pears, peeled, cored, and cut into 1-inch chunks

1 cup apple cider

1/4 cup brown sugar

1 tablespoon lemon juice

1/4 teaspoon cinnamon

Preparation

01In a food processor, place cheddar, parmesan, flour, mustard, salt, and cayenne. Pulse several times to incorporate. Add butter and pulse until butter incorporates and becomes closer to the size of BB’s. Add water, 1 tablespoon at a time, and pulse until dough starts to hold together.
02Turn dough out on a large piece of wax paper and combine. Roll into a 9 to 10-inch log, wrap in the wax paper, and refrigerate at least 2 hours and up to 2 days.
03In a large pot over high heat, add apples, pears, cider, brown sugar, lemon juice, and cinnamon. Bring to a boil then reduce heat to low. Cook, stirring occasionally, until there is no liquid left, approximately 2 1/2 to 3 hours. Stir vigorously to smooth the mixture and allow to cool.
04Preheat oven to 375 degrees F. Line 2 baking sheets with parchment paper.
05Cut the cracker dough into 1/4 -inch thick slices and arrange on baking sheets. Bake for 10 minutes then turn over and bake another 8 to 10 minutes until golden brown. Cool on a rack.
06Serve crackers and apple pear butter together.
07Note: apple pear butter will keep up to 2 weeks in the refrigerator in a tightly covered container.
