Caramelized Onion, Fig and Blue Cheese Flatbread

2 (8 ounce) pre-baked flatbread crusts

2 teaspoons pure olive oil

1 small red onion, sliced into thin rounds, then cut in half

1/3 cup dried mission figs, sliced

2 teaspoons premium balsamic vinegar

2 cups baby arugula

1 1/5 cups cups blue cheese crumbles

Freshly ground black pepper to taste


01Preheat oven to 425 F and arrange flatbread crusts on baking sheets.
02Heat olive oil in a medium skillet over medium heat. Add onion and cook 25-30 minutes, stirring occasionally to prevent burning.
03Remove skillet from heat and stir in figs and balsamic vinegar; set aside.
04Divide arugula over flatbreads, then spoon onion mixture evenly over top.
05Sprinkle flatbreads with blue cheese crumbles and freshly ground black pepper.
06Bake for 8-10 minutes until crust reaches a crisp-tender texture and blue cheese has softened.
07Cut each flatbread into 8 squares and serve.
