About Blue Cheese & Pear Tart
This dish effortlessly combines savory and sweet perfectly. The buttery, flaky crust provides the perfect base for the creamy, tangy blue cheese and the subtle sweetness of ripe pears. Ingredients
1 sheet frozen puff pastry
1 small onion
butter, about 1 tablespoon, to caramelize the onion
1 large egg
2/3 cup blue cheese, plus more for sprinkling
2 pears (get a fun mix of colors if you can)
a few sprigs of thyme
Preparation
01Preheat the oven to 400F.
02Unroll the pastry sheet and lay on a baking tray lined with parchment paper.
03Thinly slice the onion and add to pan with a pad of butter over a medium/low heat and caramelize until soft and brown.
04Whisk the egg and blue cheese together and then using a pastry brush of spoon spread the mixture over the dough, moving it all the way to the edges to make sure the whole base is covered.
05Sprinkle the onions over the dough (if making for a side dish you can choose to concentrate the onions into 4 piles like the photo, or if using the tart as an appetizer feel free to scatter them over the whole of the dough).
06Thinly slice the pears and add to the dough (again, either on top of the onion-like the photo for individual servings, or scattered over the whole slab if you want to slice up smaller for appetizer bites).
07Sprinkle a little more blue cheese on top of the pears, and backcomb the leaves off a couple of sprigs of thyme for seasoning.
08Pop in the oven for about 15 minutes or until the pastry is puffed up and golden brown. Allow to cool slightly, slice and serve with some freshly ground pepper.
