Ingredients

12 pounds papaya, raw or frozen

6 1/2 quarts non-fat Greek plain yogurt

1 cup dry quick oats

1 tablespoon vanilla extract

1 cup honey

Preparation

01If using fresh papaya, use a sharp knife to carefully cut the papaya in half lengthways.
02Use a spoon to scoop out the black seeds. Discard the seeds and cut the papaya into wedges. Run a knife between the peel and flesh to separate. Discard the peel.
03In a blender, combine all the ingredients. Add in 1 cup of ice and blend well until it's a smooth consistency.
04Serve in 12 ounce cups. Top with additional fruit, granola or cereal if desired.
