For Donuts

2 cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

2 eggs

1 1/4 cup buttermilk

1 vanilla pod, seeds scraped

2 tablespoons unsalted butter, melted

2 teaspoons vanilla extract

For Glaze

1 cup icing sugar, sifted

2 tablespoons milk

1/4 teaspoon strawberry jelly

1/4 teaspoon blueberry jelly

1/4 teaspoon lemon curd

Preparation

01Preheat oven to 350 F. Lightly grease standard donut pans with nonstick cooking spray. Whisk flour, baking powder, sugar and salt together in large mixing bowl. In smaller mixing bowl, whisk together buttermilk, eggs, vanilla and melted butter. Add wet ingredients to dry ingredients and mix until combined.
02Fill cups in donut pan 3/4 full with the donut batter. Bake for 15-18 minutes or until donuts are golden and spring back when lightly touched. Cool donuts in pan for 10 minutes, then turn out onto wire cooling racks and cool completely.
03While donuts cool, make glaze by whisking icing sugar and milk until combined. Divide glaze evenly into three small bowls and add one fruit preserves to each bowl, mixing until combined.
04When cool, dip the tops of donuts in the glaze. Return the donut to the cooling rack until glaze is set.
