About Fruity Frozen Yogurt Bites

Ingredients

1 cup mashed or pureed ripe fruit

1 cup plain Greek yogurt

1 tablespoon honey (or maple syrup)

1/2 teaspoon vanilla extract

Pinch of salt

Additional fruit, optional for garnish

Preparation

01Line cups of a mini muffin tin with paper liners. Alternatively, place the liners on a freezer-safe plate or baking sheet.
02In a small bowl, combine the fruit puree with the yogurt, honey, vanilla, and salt. Whisk to combine.
03Fill the mini muffin liners with 1 tablespoon of the yogurt-fruit mixture. Garnish with pieces or slices of fresh fruit, if you want. Place in the freezer for 2 to 4 hours to allow the yogurt bites to freeze.
04Once the yogurt bites are frozen, remove from the freezer. If you used a muffin tin, let sit at room temperature for 5 to 10 minutes so they will easily release from tin, then remove the bites from the pan. Immediately transfer the bites to an airtight, freezer-safe container or baggie. Keep bites in the freezer until ready to enjoy. At snack time, let sit 5 minutes at room temperature to easily remove the paper liner.
05NOTE: Look for mini silicone ice cube molds in fun shapes to place the yogurt fruit mixture to replace the muffin tin. These frozen yogurt bites can also become quick smoothies. Simply place 4 or 5 bites in a blender, then top with 1 cup milk or kefir and blend.
