Ingredients

1 pound thin spaghetti (or pasta of choice)

2 tablespoons unsalted butter

1 small onion, diced

8 ounces cremini mushrooms, sliced

3 cloves garlic, minced

1 teaspoon fresh thyme, chopped

1/2 cup chicken broth

1/2 cup whole milk

8 ounces Brie, rind removed, cut into small pieces

1/2 cup grated Parmesan cheese

1 tablespoon Worcestershire sauce

1 tablespoon Worcestershire sauce

Optional: chopped fresh parsley

Preparation

01Cook pasta according to package directions and drain.
02In a large sauté pan, melt butter over medium heat. Add the onions and mushrooms, and sauté until the onions are translucent, any mushroom liquid that’s released has evaporated, and the vegetables are tender; approximately 10 minutes.
03Add the garlic and thyme and cook until the garlic is fragrant, about one minute. Add the broth to deglaze the pan. Bring to a simmer over medium heat.
04Stir in the milk and continue to simmer until thickened, approximately 3 to 4 minutes.
05Stir in the Brie, Parmesan, and Worcestershire sauce. Remove from heat and allow the residual heat to melt the cheeses, then continue stirring. Season with salt and pepper to taste. Stir in additional broth if the sauce becomes too thick.
06Stir into the pasta. Serve and top with fresh parsley, if using.
