Ingredients

1 ½ cup of all-purpose flour

1/2 cup sugar

1/2 teaspoon salt

1/2 teaspoon baking powder

1/2 teaspoon baking soda

2 large eggs

1/2 cup Greek yogurt (vanilla or plain)

1/2 cup oil

1 tablespoon vanilla

1 lemon, zest and juiced

2 cups blueberries (fresh or frozen)

1 cup strawberries, sliced into wedges

Preparation

01Preheat oven to 350 degrees. Grease a standard 12 muffin pan or line with paper muffin cups.
02In a medium bowl, combine flour, sugar, salt, baking powder, and baking soda.
03In a separate bowl, lightly beat eggs. Mix in the yogurt, oil, vanilla, lemon zest and juice, until well blended.
04Add wet mixture to dry mixture and mix just enough to blend. Gently fold in blueberries and strawberries into the muffin mix; do not overmix.
05Scoop muffin mix into prepared muffin tins. Sprinkle muffin tops with raw sugar and bake for 25- 30 minutes, or until the tops are golden brown.
