Biscuit Topping

1 cup all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon fine salt

3 tablespoons cold unsalted butter cut into small cubes

1/2 cup milk

Apples

2 tablespoons all-purpose flour

1/4 cup light brown sugar

1 teaspoon ground cinnamon

1 teaspoon freshly squeezed lemon juice

3 sweet or tart apples, cored and thinly sliced

Butter, for cooking

Vanilla ice cream, for serving

Caramel Sauce

1 cup packed brown sugar

1/2 cup unsalted butter

1/4 cup whole milk

Pinch kosher salt

Preparation

01Preheat oven to 350F. To make biscuit topping, combine flour baking soda, baking powder and salt in medium mixing bowl. Using pastry cutter or fork, cut in cold butter until dough comes together into coarse meal. Stir in milk until combined.
02In separate mixing bowl, combine flour, brown sugar and cinnamon. Stir in lemon juice and apples until well coated.
03Transfer apples to buttered mini cast iron skillets or ramekins. Spoon biscuit dough over apples. Bake on rimmed baking sheet for 30 minutes until apples are tender and biscuits are golden brown.
04While cobblers bake, combine all ingredients for caramel sauce in small saucepan over medium heat. Bring to soft boil, stirring frequently and cook until thickened, about 2 minutes. Keep warm in pot until ready to serve.
05Remove cobblers from oven and let cool 5 minutes. Serve with scoop of vanilla ice cream and caramel sauce.
